Cauliflower Rice

Hello reader!

No matter how much we try to convince ourselves, but the fact that we cannot stick to a healthy regime is permanent. Unless you are ready to give it a shot relentlessly, life with a healthy diet is almost close to living in hell! This implies mostly to those, who love to eat and cook.

I will be totally honest here; though people constantly tell me that I don’t look my age, it has never been a result of some great diet, I promise. I’m one of those people who are genetically built to gain weight at the speed of a tortoise. So, there is nothing called ‘good-diet-good-body’ sort of a thing here with me!

Having said all the things above, here is one more to add – while it’s difficult, we can still try something nice and healthy for a change (though, once in a while).

Here is a quick recipe to a healthy dish, that will sweep you off your feet if you are a huge fan of cauliflower! And yes, not to forget the core value – it’s healthy and low in carb.

Without wasting much time (which I already have), here is the recipe to this amazing bowl of health. Please note, you can tweak this recipe as per your liking and also share with us. I’d love to hear how it went!

Ingredients:

  1. Cauliflower ……………………….…… 1 whole (medium to large)
  2. Carrots …………………………………… 1 medium (chopped)
  3. Beans/Green Peas …………………… 1/2 cup (optional)
  4. Spinach …………………………..……… 1 large (chopped)
  5. Onion ……………………………..……… 1 large (finely chopped)
  6. Coriander Leaves ………………….… 1/2 cup (finely chopped)
  7. Turmeric Powder ………………….… a pinch for colour (optional)
  8. Garlic ……………………………….…..… 1/4 cup (chopped) or 2 cloves crushed
  9. Salt …………………………………….…… to taste
  10. 10.Pepper ………………………………… as you like
  11. 11.Red Chilli Powder ………………… as you like (optional)
  12. 12.Olive Oil ……………………………… for cooking

Method:

  • Separate the cauliflower florets and put them in boiling water only for a minute. Keep it aside to cool
  • Use a food processor to finely chop the florets. Make sure NOT to grind them to coarse paste
  • Heat the wok and pour oil to it. Change the flame from high to low
  • Add the onion and sauté for about 2 minutes
  • Crush the garlic and add it now. Let it brown lightly
  • After a minute, add carrots and beans/peas (whatever you choose)
  • At this time, you can add in all the powders, pepper, salt and give it a nice mix
  • Cook for another 3 minutes with the lid on, until the veggies are nicely done
  • Add spinach and cook for another minute (you don’t want to overcook your spinach, trust me)
  • Finally, add the cauliflower rice and mix well
  • Cook this with closed lid for 5 – 6 minutes, while folding occasionally  to avoid burning and overcooking

You can have this dish just like that, or club it with a healthy curry to go with. I tried it with stir fried veggies & bacon. It was awfully tasty!
